All of my
cakes are baked to order, using only the best and purest ingredients. I use only premium imported and domestic chocolates and cocoa. Butter, milk, cream, eggs, fruit (when available) and Tahitian vanilla beans, are all organic. The 00 Caputo pastry flour from Italy helps to create unusually tender cakes with a fine crumb and. exactly the right amount of moistness Powdered fondant/icing sugar is India Tree's (
www.indiatree.com) version specially developed for the baking trade. It has much less cornstarch than grocery brands and is formulated to produce "smoother and glossier" icings and fondants. Their Caster/Superfine sugar is the best sugar for my cakes. It allows for superior blending of ingredients with less mixing--over-mixing produces a tough cake.
My sugar flowers and decorations are all personally handcrafted from sugar paste, fondant, marzipan, butter-cream and royal icing. My meticulous attention to detail helps to create superbly realistic looking flowers (see picture gallery) and other painstakenly crafted, detailed decorations
